Milk Gravy

3 T meat drippings (bacon,beef,poultry,ham)
3 T flour
2 c milk
salt and pepper to taste

Leave 3 T of drippings in pan that meat was cooked in. Add flour and brown slightly while stirring. Remove from heat and add milk, stir well. Return to heat and stir mixture until thick and smooth. Season to taste. Makes 2 cups.

Bakery Brownies

2 c sugar
2/3 c cocoa
3/4 c butter
4 eggs
1/2 t salt
1 1/2 c flour
1 t baking powder
2 t vanilla
1/2 c chopped nuts, optional

Preheat oven to 350. Melt butter. In large bowl mix all ingredients and blend well. Pour into 9x13 greased pan. Bake 22 minutes DO NOT OVERBAKE!! Remove and cool completely. Frost with Brownie Fudge Frosting.

Andy's Chocolate Chip Cookies

This recipe comes from my grandma, but no one in our house makes them as good as Andy!

1 c brown sugar
1 c white sugar
1 c shortening
2 eggs, beaten
1 t baking soda dissolved in 1 T hot water
1 t vanilla
1 t salt
3 c flour
1-2 packages of chocolate chips,butterscotch chips, peanut butter chips, or mix of any of these

Preheat oven to 350. Beat shortening and sugars together. Add eggs, cream well. Stir in soda water, flour, salt, and vanilla. Blend well. Add chocolate chips. Drop by large cookie scoop onto cookie sheet and bake for 10-12 minutes or until just slightly brown on edges. remove to cooling rack. Makes 3 dozen.

Brownie Fudge Frosting

1/2 c butter
1/2 c cocoa
1# powdered sugar
1/3 c milk
1 t vanilla

Melt butter in microwave. Stir in cocoa until smooth. Return to microwave and nuke 1 minute or until mixture begins to boil. In mixing bowl add powdered sugar. Beat in melted cocoa until mixture starts to set up. Pour onto brownies and let cool completely before cutting.

Butter Cream Icing

1 1/2 c butter, softened
1 1/2 c Crisco shortening
3# powdered sugar
1/3 c milk
1/2 t vanilla
1/2 t almond extract

In a large bowl, beat together butter and shortening. Add flavorings. Add powdered sugar and milk, alternately. Continue beating until light and fluffy. About 3-5 minutes.

Anna's Light and Tender Baking Powder Biscuits

This is my Grandma Anna's recipe for biscuits. She always says that the key is to handle the dough very little and they will turn out flaky. I still can't get them as good as hers, but heres the recipe.

3 c flour
4 1/2 t baking powder
2 T sugar
1/2 t salt
3/4 t cream of tartar
1 egg, beaten
1 c milk
3/4 c butter

Preheat oven to 425. Combine first 5 ingredients. Cut in butter until crumbly. Add the egg and milk and stir until just mixed. Turn out on lightly floured surface. Roll out to about 1" and cut with a biscuit cutter or cut into 2" squares with a pizza cutter. Bake for 12-15 minutes.

Banana Bread

1 1/4 c sugar
1/2 stick butter, softened
2 large eggs
3-4 medium ripe bananas
1/2 c buttermilk
1 t vanilla
2 1/2 c flour
1 t baking soda
1 t salt
1 c chopped nuts, optional

Mix sugar and butter together. stir in eggs and mix well. Add bananas, buttermilk, and vanilla. Beat until smooth. Stir in flour, baking soda, and salt. Stir in nuts. Pour into 2 well greased loaf pans and bake at 350 for 60-70 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes in pans on wire rack. Remove from pans and continue cooling. Will keep up to 10 days in fridge.

Tomato Macaroni Salad

3 c uncooked elbow macaroni
1 c ham, diced
1/2 c celery, diced
1 cucumber, peeled and diced
1 c frozen peas, thawed
2 large fresh tomatoes, diced
1 c mayo
1/4 c vinegar
1 t Lawry's seasoning salt
1/4 c cream

Cook macaroni, rinse in cold water and drain. Make sure macaroni is completely cool. In large bowl, combine macaroni, ham, tomatoes, cucumbers, celery, and peas. In a seperate bowl combine mayo, vinegar, salt, and cream. Blend well. Pour over macaroni mix and stir gently. Refrigerate until ready to serve. Serves 8-10

Cream of Potato Soup

3 large potatoes, peeled and diced
2 stalks of celery, finely sliced
1 medium onion, diced
1 pint half and half, or 1 can evaportated milk
1/2 # bacon, cooked and diced
1 T flour
1 t chicken base

Place potatoes, onions, and celery in pot. Cover with water and boil until tender. In a small skillet, fry bacon until crisp. Remove bacon from pan onto a paper towel to drip off grease. Remove the pan from heat and add flour to bacon grease. Blend well. Stir bacon mix into the potatoes-- This is what causes the soup to thicken. Slowly add milk and stir often. Heat through and DO NOT BOIL!!!!!!!! Serve hot. Serves 8

Cream of Broccoli Cheese Soup

1/2 c butter, melted
2/3 c onions, chopped
2/3 c celery, chopped
2/3 c flour
1 1/3 pints hot water
1 small package frozen broccoli or 1 head of broccoli, chopped
1 can evaporated milk
2/3 c cream
1 1/3 pints milk
1 3/4 T chicken base
1 t basil
1/2 c velveeta cheese, cubed

In saucepan, melt butter, add onions and celery; saute until translucent. Add flour and stir until bubbly. Stir in hot water and cook, stirring until thick. Stir in milk, cream, and canned milk. Add broccoli. Add chicken base and basil. Add cheese. Stir until melted. DO NOT BOIL!!! Keep heat on low to prevent scorching. Serves 8

Great Grandma Anna's Hamburger Soup

1 # lean ground beef
1 medium onion, chopped
3 medium potatoes, cubed
3 carrots, sliced
2 cups cabbage, chopped
2 celery ribs, sliced
1 large can tomatoes
1/2 c uncooked rice
1 t basil
1/2 t thyme
1 bay leaf

Brown hamburger and onion, drain fat. Add remaining ingredients. Add enough water to cover the vegetables. Cover and simmer until vegetables are just tender. Stir occasionally to keep from scorching.

Marie Callendar's Corn Bread Mix from Costco

I never really liked cornbread that much. I didn't like the grainy texture. I thought people put butter and honey on it to hide the fact that it was dry. But once we tried Marie Callendar's Corn Bread Mix from Costco we love it!!! It is more like moist sweet cake and really doesn't need butter and honey--unless you want to! I make this as a side dish for a lot of things and it is so simple to make. Next time your at Costco try it out!

3 cups mix
1 1/2 c water

Place in a greased 8 x 8 baker. Bake at 350 for 30 minutes

Chicken/Tuna and Pasta Casserole

This recipe comes from my dear friend Heidi. I have altered it a little when I was out of something and it was a huge hit at our house so it made it on here. Thanks Heidi!!

1 box whacky maki pasta (or any other form)
2 c water
2 T chicken base
1 can cream of mushroom soup
1 12.5 oz canned chicken or 2 small cans of tuna
1 cup cheddar cheese, grated
1 can french fried onions

Bring water and chicken base to a boil. Add pasta and cook. DO NOT DRAIN WATER! Add soup, and chicken, stir. Sprinkle cheese on top and then French fried onions on top. Warm until cheese is melted. Serve.

Quick Tettrazzini

1 small box of spaghetti
1 12.5 oz canned chicken or leftover turkey
1 can cream of chicken or mushroom
1/2 t pepper
1 t garlic powder
4 oz velveeta cheese

Cook spaghetti according to package. Rinse with cold water in colander and set aside. In pan warm remaining ingredients until cheese is melted. Add spaghetti to soup mix. Serve warm. This makes alot!! So make a large batch and freeze some for a quick dinner reheat or to give away.

Chili Dogs

These are one of Andy's favorites and not that anyone really needs a recipe for these, but when I am looking for a quick meal idea I always forget about them. The kids and I usually eat the chili and cheese like normal and then a hot dog on the side.

1 package hot dogs
1 package hot dog buns
2 cans chili
1 package chredded cheese or cubed velveeta
1 medium onion, diced

Heat up hot dogs in water until warmed through. Heat up chili until warmed through. Place hot dog on bun. Pour desired amount of chili (for Andy it is 1 can) over top of hot dog. Sprinkle with cheese and other garnishes.

Snowman Soup

1 ziploc baggie of Hot Cocoa Mix, "snowman soup"
1 ziploc baggie of mini marshmallows "snowballs"
1 ziploc baggie chocolate and white chocolate chips "hugs and kisses"
1 ziploc baggie candy canes "sticks"

After playing in the snow, Place 1-2 T of mix into a snow mug of hot water. Throw in a snowball or two for fun and a hug and kiss from me to you! Stir with a stick...Sip...Enjoy!

Pumpkin Cupcakes

1 can pumpkin
1 box cake mix (we like chocolate or spice)
2/3 c water

PREHEAT OVEN TO 350. MIX ALL INGREDIENTS TOGETHER. BAKE 10-20 MINUTES. MAKES 24 CUPCAKES AT 2 POINTS EACH.

Meatballs with Gravy

12 meatballs
1 can cream of mushroom soup
1 soup can milk
prepared rice

Preheat oven to 350. Place meatballs in oven proof baker. Mix soup and milk together. Pour soup mix over meatballs. Bake 20 minutes thawed or 40 minutes frozen. May also be placed in crockpot to cook on low for 3 hours.

Cherry Crockpot Oatmeal

1 t vanilla extract
1 t almond extract
8 c water
3 1/2 c steel cut oats
2 bags frozen cherries, or other fruit

optional** 1 can sugar free cherry pie filling

Add all in the crockpot and cook on low for 1-2 hours until thickened. It makes alot and I put into individual servings containers and freeze.

OAMC (ONCE A MONTH COOKING)

So it might appear that I have neglected this blog, but really it is because I have been catching up on my OAMC. I have made taco meat, meatballs, processed our deer into cheddar dogs, breakfast sausage, and snack stix. So I have been in the kitchen!

Texas Trail Beef Macaroni

2 t Worcestershire sauce
2 t chili powder
2 cloves garlic
1 c onion, chopped
14 1/2 oz canned tomatoes
1# ground beef
3 c beef broth
1/2 t Italian Seasoning
1 can Hunt's original spaghettti sauce
1 box whole wheat pasta


Brown meat and onions. Add garlic. Add remaining ingredients and let simmer. Boil noodles until cooked through. Add noodles to meat sauce. Serves 8.

Tartar Sauce

1/2 c mayo
3 T dill pickles, minced
1 T parsley, minced
2 t milk
1/2 t onion, grated
1/2 t dijon mustard

In small bowl mix all ingredients together until well blended. Store in fridge.

Sweetened Condensed Milk

1 1/2 c powdered nonfat milk
1/2 c water
2/3 c sugar
1 t vanilla

In a 4 cup bowl, mix milk and water. Stir in remaining ingredients and microwave on high 30-90 seconds. Do not boil!! Makes 1.33 cups; use as a substitute for 1 can (14 oz) sweetened condensed milk.

Fried Rice

4-6 c cooked rice
1/2 c sauce (I use teriyaki, or Mr yoshidas, or bottled sweet and sour)
1 cup celery, diced
1/2 c onion, chopped
1 bag of frozen veggies (I use the steamers with peas,carrots,green bean mix)
1 clove garlic, pressed
1/2 # cooked shrimp, leftover roast,pork, or chicken
1 T Extra Virgin Olive Oil

Cook rice and microwave the frozen veggies for 3 minutes. Heat oil in skillet over medium high heat. Suate celery and onions until crisp tender. Add and heat garlic. Add veggies and heat. Add meat and heat. Add sauce and heat. Add rice to the mix. Serve hot with a side of eggrolls.

Septic Tank Treatment

1 qt hot water
1# brown sugar
2 t dry yeast

Disssolve sugar in water. Leave set until luke warm. Stir in yeast and immediately flush down toilet. Do this before bed when there will not be frequent flushing.

Pumpkin Pancakes

2 c flour
2 T sugar
4 t baking powder
1 t salt
1 t cinnamon
1/4 t ginger
1/4 t clove
1 1/2 c milk
1 c pumpkin puree *if fresh reduce liquids by 1/2 cup
4 egg
1/4 c butter

Combine all dry ingredients. Combine milk, eggs, butter, pumpkin. Mix well and add to dry mixture. Cook and enjoy!

* sometimes I just use pumpkin pie spice instead of all of the seperate spices.

Pumpkin Bread

2/3 c applesauce, unsweetened
1 c sugar
1 c brown sugar
4 eggs
1 can pumpkin, or 15 oz fresh pureed pumpkin *don't add water if fresh is used*
1/2 c water
3 1/3 c flour
2 t baking soda
1 1/2 t salt
1/2 t baking powder
2 t cinnamon ** or use pumpkin pie spice mix for cinnamon and nutmeg
1/2 t nutmeg

Mix all liquids together. Mix all dry ingredients together. Add dry ingredients to liquids. Mix thoroughly. Bake at 350 for about 60-70 minutes. makes 2 loaves

Potato Ham Skillet

4 1/2 t butter
3 medium potatoes, peeled and sliced
1/2 t salt
1/4 t pepper
1/2 c onion, chopped
2 c cooked ham, diced
3 eggs, beaten
1/2 c shredded cheddar cheese

Melt butter over medium heat in a large skillet. Layer 1/2 potatoes on bottom. Sprinkle with 1/2 salt, pepper, onions, and ham. Repeat layers. Cook 15 minutes until potatoes are tender. pour eggs over the top and sprinkle with cheese. Cover and cook 3-5 minutes or until cheese is melted and eggs are set. cut into wedges and serve. Serves 6 wedges .
